  • 8 oz dry macaroni noodles
  • 3 tbsp butter or margarine softened
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk {at room temperature}
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • dash of pepper
  • 4 oz sharp cheddar cheese shredded {add more if you prefer a cheesier taste}
  • 3 oz cream cheese thinly sliced


  • Preheat oven to 400 degrees F (200 degrees C).
  • Lightly grease a 2 quart baking dish.
  • In a large pot of boiling salted water cook the macaroni noodles until al dente or slightly firm {al dente is less cooked and therefore firmer than usual}.
  • Drain and transfer noodles to a large bowl.
  • In a small saucepan over medium heat melt the butter or margarine, stir in flour until mixture is smooth and bubbly.
  • Gradually add milk, whisking constantly to prevent lumps from forming {a good trick here is to use a pot holder around the handle of the saucepan when stirring, it can get a little hot}.
  • When the mixture is blended and bubbly stir in the mustard, salt, and pepper.
  • Remove saucepan from heat, add cheeses stirring until smooth.
  • Pour cheese sauce over noodles and stir gently to coat.
  • Transfer mixture to baking dish and spread evenly.
  • Bake at 400 degrees for 10 minutes or until bubbly and lightly browned.
