1 lb of rotini noodles

2 cups chopped pepper strips

1 cup water chestnuts, sliced

2 Cans Tuna in Water

3 Cups Arugula

1 Small Red Onion, Thinly Sliced

8 Ounces Grape or Cherry Tomatoes, Halved

4 Large Hard-Boiled Eggs, Roughly Chopped

1/2 Cup Red Wine Vinegar

2 Tablespoons Dijon Mustard

½ Teaspoon Kosher Salt

3 tablespoons olive oil

1 large onion, chopped

6 cups low-sodium vegetable broth
