  • 1 pound leftover tri tip roast
  • 2 tablespoons olive oil
  • 3 finely chopped cloves of garlic
  • 1 diced red onion
  • 1 tablespoon pine nuts
  • 3 chopped carrots
  • 1 green bell pepper
  • 2 tablespoons chili powder
  • 1 teaspoon cumin seed
  • 4 cups beef broth
  • 2 15 ounce cans of red kidney beans


  • Put your tri tip roast into a crock pot with the garlic, onion, olive oil, pine nuts, carrots, and green peppers.
  • Add some salt and pepper to taste.
  • Cook on low for 7-8 hours or high for 3-4 hours.
  • Once your tri tip is finished cooking place it into a pan and brown the meat on all sides over medium heat, about 10 minutes.
  • Add in your cumin seed and cook an additional minute or two before adding in the beef broth.
  • Bring everything to a simmer and add in your kidney beans.
  • Let cook on low heat for at least an hour to allow the tri tip to soak up all the flavors of the chili, but if you have more time let it go longer! Tri tip is best served with rice or by itself.
